In the Alsace region it is used to produce fine sparkling wines which we will introduce this Saturday when we move from sparkling to dry rosés, then on to excellent expressions of the noble grape.

This sparkling wine is made in the Méthode traditionnelle (the same as Champagne) where the wine undergoes a secondary fermentation in the bottle.
