Mother’s Day or not, this is a great excuse to pop a few corks and indulge ourselves with a few sparklers; and if Mother is not around then we’ll toast her anyway. Sparkling wines are without a doubt the most versatile wines one could buy. They simply go with just about everything, including idle chatter. It must have something to do with the bubbles. The elevated acid levels add much to the versatility of the sparkling wine category by pairing well with many different foods and cuisines; and there is something imminently satisfying about the joyous sound of Champagne being popped.
Codorníu Brut Cava, Spain

Codorníu was the first bodega to use the champagne method in Spain, in the late 19th century. Codorníu was also the first to mechanize the champagne method, which is what makes it possible to sell such a quality product at such a low price. As a result, Codorníu, along with Freixenet (the one in the black bottle) are now the best selling méthode champenoise sparklers in the world. Happily, this cava remains dry and less fruity than most.

It was in 1886 that Henri Grandin first launched the elegant sparkling wine that still carries his name today. The Grandin property is still located at the château in Ingrandes-sur-Loire, with its old La Bouvraie cellars, which supply optimum ageing conditions. Grandin produces exclusively Méthode Traditionelle bottlings, identical to the vinification method in Champagne. This rosé is fermented from Loire Valley varietals, notably Cabernet Franc and Cabernet Sauvignon. Due to its minimum twelve month secondary fermentation it is fruity and complex, and a great value!

When his daughter was a little girl, Francis Coppola made her a promise that he would someday make a sparkling wine and name it after her. Sofia’s unique blend of Pinot Blanc (86%), Riesling (2%) and Muscat (12%), is a delicate sparkling wine offering seductive flavors, fresh aromatics and light effervescence. It delivers delicate scents of orange blossom, lemon and apricots. It is fresh and crisp, with light effervescence and notes of quince, green apples, pears and pineapple.
Scharffenberger Brut, Mendocino County

Scharffenberger Brut is made by the traditional méthode champenoise process from its own 120-acre vineyards in the Anderson Valley of Mendocino County. The wine is two-thirds Pinot Noir which produces a red fruit (cherry and plum) forward nose combined with one-third Chardonnay which adds the tropical expression of litchi nut and mango. The 100% malolactic fermentation adds a vanilla cream character producing a round and full-bodied wine. After approximately two years on the yeast lees, there are notes of freshly baked bread and pastry that enhances the more fruit forward style of the wine. Wine Spectator gave it a 90-point rating. Wine Enthusiast upped the ante to 91 points.
