Grape growing like most other farming is organic by origin, yet it always sounds comical to me to hear a request for “organic wine”. Of course, all wines are organic, but the method for growing the grapes and producing the wine can vary widely. So really we are referring to the process by which the grapes were grown and the wine was made. In order to label their wines “organic” wineries must pass a stringent process of certification by the National Organic Program, run by the United States Department of Agriculture. Typically, this means excluding the use of artificial chemical fertilizers, pesticides, fungicides and herbicides in the farming process. In the USA, strict rules govern the organic winemaking process at all stages of production including harvesting, the types of yeasts that can be used during fermentation as well as storage conditions. These rules are applied for all imported and domestic wines that acquire USDA certification. In the USA, the total sulfite level must be less than 20 parts per million in order to receive organic certification. Some wineries have carried the organic concept further with “greening” operations by reducing the waste stream, using more renewable energy sources, or investigating alternative seed stocks and cultivation practices. All but one are new arrivals.

The wine is pale straw in color with greenish highlights and a fine, persistent bead of bubbles. Its pronounced nose of white fleshed fruit, apples and peaches, floral notes of wisteria and acacia blossom, and hints of crusty bread and yeast make this a diverse and beautiful smelling wine. Well balanced on the palate and delicately dry, it is ideal as an apéritif, and will perfectly accompany light faire.

Tenuta Giol is the oldest documented winery in Italy, since 1427. It produces wines exclusively from grapes grown on their historic estate. They seek to combine the highest quality with the greatest respect for the environment by farming all 25 hectares of their vineyards with organic methods. This Pinot Grigio is a pale straw yellow with an elegant, delicate nose characterized by notes of peach and apricot and sun-dried hay. The crisp, balanced, well-orchestrated palate closely echoes the nose. With its fresh, summer orchard fruits, this versatile wine is a treat pretty much everywhere and anytime.

In Tuscany, this grape is referred to as Ansonica. However, its Sicilian counterpart, Inzolia, is both well known and widely accepted as a fundamental element of the classic Sicilian wine repertoire. The elegant aromas range from fruity apples to floral acacia and more complex scents of a salty or mineral-flint nature. The wine is well structured and mouth-filling with flavors that are fresh and extending to a long pleasant finish.
