Sauvignon Blanc is a very versatile wine and a good alternative to Chardonnay. The latter wine displays an apply character while the former can range from grass to grapefruit, depending on climate. Grown in a cool climate, SB displays crisp acid and vegetal notes, but in a warm climate the flavor profile can go to grapefruit and even some tropical fruit flavors. In the case of New Zealand you have to throw in gooseberries, too. We will finish the tasting with a world class Sauvignon Blanc from France: Sauternes of Bordeaux.
